||Cuvée Prestige Rosé comes from separate vinification of the grapes of Pinot Noir and Chardonnay. The grapes of Pinot Noir, once separated from the stems, are transferred by gravity into vats where it is carried out for 24-48 hours a short maceration: only a few hours to "seize the moment", that is to get that special and delicate shade of pink that will distinguish Franciacorta Rosé bottle. Following the juice separated from the skins, fermented in steel vats at controlled temperatures. The Chardonnay grapes are vinified in the traditional way instead: after pressing of whole bunches, the different fractions of must fermented separately in steel vats at controlled temperatures. After 8 months of aging it is "magic ritual" of the creation of the cuvée, assembling the base wines of Pinot Noir with Chardonnay-based wines. Cuvée Rosé obtained is then bottled and refined on the lees in the cellars underground, at a constant temperature of 12 ° C.
