Colour

Deep red with garnet hues with ageing.

Bouquet

Complex, with notes of red berry fruits such as plum and cherry. Slight spicy and balsamic notes with a hint of chocolate.

Flavour

Ample, articulated and of remarkable structure and balance.

Particularly recommended with stewed or roast meat, braised and stewed meat with polenta. It is also ideal with grilled red meat and aged cheeses.

Origin Selected vineyards in the hilly area of Valpolicella (Verona).
Climate Altitude: 150-300 m. a.s.l.
Harvest By hand, in mid-October with plateaux. Grapes are carefully selected.
Vinification After drying in the drying loft until December, crushing is followed by destemming and subsequent maceration with fermentation for about 20 days at a controlled temperature of 20-24°C.
Ageing In 5-20-40 hl French and American oak barrels for 12-24 months.
Total acidity 6.00 gr/L
Residual sugars 3.40 gr/L
Dry extract 35.00 gr/L
Allergens Contains sulphites
Pairing Particularly recommended with stewed or roast meat, braised and stewed meat with polenta. It is also ideal with grilled red meat and aged cheeses.
