Lined with 999 cypress trees that celebrate and protect extraordinary biodiversity, Ca’ Bolani is a wine estate where vines and nature thrive in perfect tune with each other. Set between the Alps and the sea - where the Friuli region meets the Adriatic at Aquileia - in a land where wine growing was introduced back in Roman times; it enjoys conditions that are ideal for growing grapes and making wine: the summer breezes off the sea, the protection afforded by the Alps, the considerable changes in temperature and the variety of the soil that leaves behind its clay and gravel composition in favour of sand as it drops off towards the sea. As a result, the estate is a unique piece of wine country, a garden-like expanse of vineyards yielding wines known for their distinctive traits: fragrance and aromatic fullness.

Colour

Deep ruby red with bright purple hues.

Bouquet

The nose is dominated by typical notes of small red fruits - blackberries, raspberries and blueberries. Warm hints of plums and cherries in alcohol harmonise with light balsamic notes. In the finish, lively spicy notes merge with olfactory hints of liquorice, vanilla, coffee and chocolate given by the long ageing in wood.

Flavour

On the palate, it is full-bodied and round, with a great structure and an excellent balance between the natural acidity of Refosco and the great softness of the tannins, re-proposing the fruity notes and balsamic accords that fade into a return of spices in the final sip.

Pairing

It pairs well with game and venison, succulent roasts and braised meats. It is also excellent with agedcheeses.

Soil composition The medium texture soil is crisscrossed by pebbly bands that are also present on the surface. They allow the vines to retain and release the natural elements they need to grow healthy.

Harvest By hand, the first decade of October.
Vinification In the winery, after a 15-day fermentation in vertical fermenters with a pump-over system, the wine is kept in stainless steel vats until the end of the subsequent malolactic fermentation.
Ageing It is then transferred to Allier oak barriques where it matures for about 24 months. This is followed by 5 to 6 months of further ageing in stainless steel barrels, after which it is bottled. Marketing takes place 6 months after bottling.
