Vinification |
The grapes selected for this wine are picked as ripe and late as possible and are then fermented in large wooden vats. |
Ageing |
After malolactic fermentation, the wine rests for a minimum of one year in Tonneau barrels, where it is divided into two ageing variants: the first one is new, whereas the second one is of second passage. |
Pairing |
Ideal with grilled meats, roast pork or veal, game, smoked or grilled fish and spicy cheeses. |
