| Harvest |
The grapes are harvested between the first week of September and the second week of October. The harvested grapes are transported directly to the winery in small crates, where they are pressed gently and carefully. |
| Ageing |
The base cuvée is vinified in the bottle in a classic way by adding sugar and yeast after bottling and gets 18 to 24 months of contact with the yeasts before the riddling process. After prolonged elevation on the lees, the bottles are disgorged. |

It pairs well with oysters, tapas, appetizers, seafood, fish and poultry. |
