A pure Sauvignon Blanc results from a careful study of clonal selection. The separate harvesting of the different clones of the same vine at different times enables this product's harmonious complexity to be created. The aromatic profiles of the wines from the different harvests are diverse and create a distinct identity. The first will provide freshness and minerality, while the second will seek structure and body. Harvests are carried out at night.

Vinification The grapes arrive perfect in the winery, a noble and fragrant raw material, as every winemaker dreams of it. At this point, all it has to be done is to preserve and enhance in the wine what nature provides. Fermentation of the must takes place very slowly at low temperatures.
Ageing The wine then rests for 3 months in steel vats on a bed of fine lees to bring out all the varietal characteristics and give the wine structure and elegance.
