||From the moment of destemming of the grapes, all the vinification takes place in complete "reduction" (absence of oxygen) and at controlled temperature in order to preserve the aromas of the grapes. Vinified entirely in steel, the wine stops on the lees with frequent battonages for at least 4 months.
||Seafood appetizers, shellfish, delicate fish dishes. Excellent also on fresh and blue cheeses.
