Soil composition |
Eocene origin (50 million years ago), turbid sediments with a prevalent calcareous composition. Medium surface soils, 30-40 cm deep, light grey-brown, heavy and cold. Marl/calcareous soil. The soil composition and northern exposure make plot 10 the perfect terroir for Merlot. |
Harvest |
Harvesting was done by hand in 10 kg crates and the bunches were selected by hand on a sorting table. |
Vinification |
The fermentation took place in steel vats. |
Ageing |
In French oak barriques, 30% of which were new, for a duration of about 18 months followed by at least as many months in bottle before release. |

Roasts, braised meats, mature cheeses. |
