Perlage

Soft and creamy mousse. Good persistence of a soft crown; fine and continuous perlage.

Colour

Vivid straw-yellow.

Bouquet

Rich, elegant, variegated. Hints of ripe tropical yellow fruit, which progressively become more concentrated and then evolve into notes of candied citrus.

Flavour

On the palate it reveals a marked acidity and sapidity, it has great structure, a rare drinking pleasure that ends with a long, precise finish.

Pairing

Excellent as an aperitif, it is ideal with delicate risotto and fish dishes. Try it with raw ham from Sauris, Parma or San Daniele and cheeses that are not too mature.

Second fermentation in the bottle and subsequent ageing in contact with its own yeasts for at least 24 months, followed by a further 2 months after disgorging. The lower pressure in the bottle (5 atmospheres at the end), a characteristic of the Satèn type, confers elegant creaminess.
