The first fermentation, which occurs through yeast Saccharomyces bayanus, selected to enhance the aromatic grape heritage, takes place in stainless steel tanks at a temperature of about 18 ° C. A small proportion of Chardonnay and Pinot Noir is aged in oak barrels before blending final.
