||Exposure: south, south-west.
||Simple broken pergola and espalier.
||Manual at the end of August, beginning of September.
||In white, with soft pressing of the whole grape and maximum yield in must of 60%. Fermentation conducted partly in steel and partly in barriques. Refermentation in the bottle with the addition of selected yeasts for frothing.
||Refinement and stay on the lees for about 40 months. Manual Remuage on pupitres, disgorging without addition of any liqueur d'expedition. Rest in the bottle for a further 3-4 months.
||Ideal as an aperitif. Because of its organoletic completeness it is also excellent throughout the meal.
