Harvest	Traditional, by hand in boxes.
Vinification	Soft pressing of whole grapes to obtain and ferment only 50% of the must at controlled temperature. Ageing in steel tanks until Spring on its own yeasts.
Ageing	Assembling the cuvée using, together with vintage wines, 10% of wines of old vintages refined in magnum to confer complexity and uniqueness. Draft with selected yeasts on the farm and bottle ageing for at least 24 months. Bleeding and further 2 months of evolution before being put on the market.
