||Soft pressing of whole grapes to obtain and ferment only 50% of the must at controlled temperature. Aging in steel tanks until spring on its own yeasts.
||Assembling the cuvée using, together with vintage wines, 10% of wines of old vintages refined in magnum to confer complexity and uniqueness. Draft with selected yeasts in the farm and bottle aging for at least 24 months. Bleeding and further 2 months of evolution before being put on the market.
||Elegant and refined aperitif that accompanies good food, also excellent with fresh fruit.
