Spurred cordon and Guyot. |
Harvest |
By hand, between late August and the first decade of September. |

Alcoholic fermentation then follows on clear must, conducted at low temperatures (15-17 °C) for 15 days. Vinification is carried out in steel vats. |
Ageing |
4 months on the noble lees, which are frequently stirred. |
Pairing |
It pairs well with delicately flavoured cold meats such as sweet ham. It also perfectly pairs with pasta dressed with vegetables or shellfish. |
