Opheliah Maria is the result of a careful selection of only Cabernet Sauvignon grapes growing on a plateau at 200 m. a.s.l. It is one of the few single-variety products in the area of Bolgheri. The aging and the special sensory qualities give life to an elegant wine with a great personality, wide, intense and velvety tannins.

Bright ruby red color.

Bouquet

Just opened it surprises for its rich bouquet reminding the Mediterranean macchia, above all juniper and myrtle, well rooted on a cocoa beans background. Progressively it develops its fruity nature, ruled by fresh red berries and afterward by a hint of dried bell pepper, accompanied by a charm spicy nuance of black one. The balsamic finish is clean and sharp, sketched out by aromas of mint, liquorice, laurel and rhubarb.

Flavour

The mouth, according to the nose, offers on one side the 2010 climate through an acid freshness and on the other side Argentiera’s terroir with a fine mineral and maritime savory. The body, well balanced, displays a full but elegant structure, that along with the velvet tannic weave it’s quite promising for the future aging.

Harvest The perfect weather conditions, with sunny and windy days, allowed us to continue the harvest of Cabernet Sauvignon so that we finished the harvest about Mid of October, with all the grapes in the best ripening condition and with an excellent polyphenolic development and sugar balance.
Fermentation temperature 28-30 °C
Fermentation period 28-30 days.
Vinification The fermentation and maceration in contact with the grapes took place in concave stainless steel tanks for about 28-30 days at a controlled temperature around 28-30 °C.
Ageing The wine was then transferred into 225 l French oak barrels (Allier and Troncais) where malolactic fermentation was completed and it was aged for 20 months. Afterwards the wine remained for a further fining in bottle at least 12 months before its release on the market.
