A pure Nebbiolo made into sparkling wine using the Classic Method. Launched in 2011, it is the third sparkling wine from Antica Cascina Conti di Roero: a successful experiment by the company. Even when vinified as sparkling wine, Nebbiolo maintains the characteristics of its primary aromas. It is harvested at the end of August before the grapes are fully ripe when the acidity still stands out.

Fermentation temperature 17-18°C
Vinification After careful selection, the grapes undergo a soft pressing immediately after manual harvesting. The must thus obtained is left to decant and then fermented at a controlled temperature of 17 - 18° in steel vats. In spring, the base wine, with the addition of liqueur de tirage is bottled. The bottles are laid horizontally in large stacks in an environment with a constant temperature of 12-14°C, where they will remain for at least 18 months for the second fermentation. Next, the bottles undergo the riddling step to detach the lees sediment from the bottle walls and bring it up to the cork of the inverted bottle. This is followed by the disgorgement phase, the bottles are topped up by adding a small dose of 'liqueur d' expédition'. The sparkling wine is then corked and left to rest for several months before being sold.
Ageing At least 24-36 months in the bottle on the lees.
