Vinification |
After careful selection, the grapes undergo a soft pressing immediately after manual harvesting. The must thus obtained is left to decant and then fermented at a controlled temperature of 17 - 18°C in steel barrels. In spring, the base wine is bottled with the addition of sugar and selected yeasts. The bottles are laid horizontally in large stacks in an environment with a constant temperature of 12 to 14 degrees, where they will remain for at least 18 months for the second fermentation. Next, the bottles go through the riddling phase to detach the lees sediment from the bottle walls and bring it up to the cork of the inverted bottle. This is followed by disgorgement. Finally, the sparkling wine is corked and left to rest for several months before being sold. |
