||Most of the wines are aged in oak barrels. The use of barrels is here a means rather than an end, that is the search for complexity, balance and elegant effervescence without disguising the original expression of the terroir. We use bourguignonnes and champenoises barriques with 2 to 5 wines. No malolactic fermentation. Aging before release: 4 years.
