Soft pressing of the whole grapes. Fermentation in temperature-controlled stainless steel tanks. Finally, the partial malolactic fermentation occurs in October. |

4 months in stainless steel. It then ages 2 months in the bottle. |

It perfectly pairs with mixed grilled fish, peppered mussels and clams, sea bass in salt, Paella Valenciana, cod, chicken salads, nuts and exotic fruit. |
