Soil composition Granitic, sandy soils.
Vinification Grapes are selected in the vineyards. Quick transport to the winery in 15 kg crates. The grapes were not destemmed before entering a pneumatic press for low-pressure pressing. It is fermented, without static settling, with its yeasts at a controlled temperature and without using any additional product other than sulphur.
Ageing Weekly bâtonnage for 3 months and ageing on its yeasts for 6 months until bottling. Bottled without cold tartaric stabilisation and clarification. It is then filtered with low levels of SO2.
