History and Production of Whisky

Whisky, a grain distillate, has ancient origins between Ireland and Scotland. Although attributed to St. Patrick, the first certain evidence dates back to 1494 in Scotland. In the 16th century, the Scots made it a profitable trade, leading to taxes and restrictions. In Ireland, distillation was granted in 1608. In the 19th century, international expansion grew, introducing new techniques such as the column still and blended whiskies.

Whisky Production Method

Whisky is produced in five stages: malting, infusion, fermentation, distillation and maturation. Malting transforms starch into sugars, while infusion produces wort . After fermentation, an alcoholic liquid called'wash' is obtained. Double distillation follows in copper stills. After maturation in oak casks, the whisky can be filtered and bottled.

Types and Production Areas

Scotch Whiskies include Single Malts and Blended Malts, while Blends are blends of malts and grain. The different production areas influence the style of whisky. Irish Whiskies are smooth due to triple distillation and the absence of peat. American whiskies, such as Bourbon and Rye, vary in the grains used. Oriental whiskies, Japanese and Indian, follow the Scottish tradition and develop complex profiles.
