The Borgo San Daniele philosophy is expressed through a strictly limited range of wines and a handful of key concepts. First and foremost, is the mineral character that comes from the soil, a feature that is hard to explain in words, but shines through in the wines. Then there is the sense of place, which for us means focusing on native grapes and working to recover local varieties deeply rooted in the culture of the region, such as Pignolo, a difficult and even introvert variety.

The high standars at Borgo San Daniele are based on irrevocable rules of pratice which begin in the vineyard with high density planting, low plant vigour, grass cover, green harvesting in summer and late picking. In the cellar, features of the vinification include skin contact for white wines, malo-lactic fermentation, long ageing on the lees and micro-oxygenation in various types of containers during the period of maturation in order to allow bottling without filtration.
