The geological composition of fine-grained \u003cstrong\u003esilty marls\u003c\/strong\u003e gives the \u003cstrong\u003eNebbiolo\u003c\/strong\u003e its distinctive \u003cstrong\u003eelegant tannic texture\u003c\/strong\u003e and remarkable gustatory persistence, making it a wine of great balance and depth.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe production process begins with manual harvesting, followed by destemming and crushing. \u003cstrong\u003eMaceration on the skins\u003c\/strong\u003e lasts from ten to fifteen days at a controlled temperature, allowing for the ideal extraction of colour and aromas. Once malolactic fermentation is concluded by the end of winter, the wine begins its ageing process. This involves a period of about twelve months in \u003cstrong\u003elarge oak casks\u003c\/strong\u003e, aimed at providing softness and harmony.
