Regarding the production of Verdicchio di Matelica from the Collestefano winery, only Verdicchio grapes are used. The \u003cb\u003eharvest\u003c\/b\u003e begins with the manual harvest in the second half of September, with the bunches being placed in small crates after being carefully selected to ensure only the best and ripest bunches are chosen. The grapes are then transferred to the cellar where they undergo a \u003cb\u003esoft pressing\u003c\/b\u003e. The next step is the \u003cb\u003evinification\u003c\/b\u003e process, which begins with a slow, low-temperature \u003cb\u003efermentation\u003c\/b\u003e without malolactic fermentation, even if the grapes have a high level of acidity. This is followed by \u003cb\u003ematuration\u003c\/b\u003e, which lasts at least four months directly on the fine lees in stainless steel, and concludes with a further period of \u003cb\u003erefinement\u003c\/b\u003e in the bottle to ensure the wine's proper balance.
