On the palate, it exhibits a \u003cstrong\u003eharmonious balance\u003c\/strong\u003e between an enveloping sweetness and fresh savouriness, closing with a long, persistent finish with subtle iodised notes.\u003c\/p\u003e\u003ch3\u003eWhere it comes from\u003c\/h3\u003e\u003cp\u003eThe Castello della Sala vineyards are located in Umbria, near Orvieto, in a landscape framed by the course of the Paglia river and Mount Nibbio. The vines grow at altitudes between two hundred and four hundred and fifty metres on \u003cstrong\u003eclay and limestone soils\u003c\/strong\u003e, rich in marine fossils. The climate is characterised by typical \u003cstrong\u003emorning mists\u003c\/strong\u003e, essential for encouraging the uniform development of Botrytis cinerea on the clusters. This peculiar microclimate allows for slow dehydration of the berries, leading to that extraordinary \u003cstrong\u003econcentration of sugars\u003c\/strong\u003e and aromas that defines the unmistakable character of this wine.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe production process involves a rigorous \u003cstrong\u003emanual harvest\u003c\/strong\u003e between the end of October and the beginning of November, carried out in several passes to collect only the botrytised berries. In the cellar, after meticulous selection, the grapes undergo gentle crushing and soft pressing. The must undergoes \u003cstrong\u003efermentation in steel\u003c\/strong\u003e for about eighteen days at a controlled temperature.
