The \u003cb\u003eMontalbera\u003c\/b\u003e farm, founded at the beginning of this century, extends across three different municipalities: Grana, Castagnole Monferrato, and Montemagno. The areas where the Montalbera winery has developed its activities are located in areas renowned for their \u003cb\u003ewinemaking\u003c\/b\u003e activity, such as the \u003cb\u003eMonferrato\u003c\/b\u003e and \u003cb\u003eLanghe\u003c\/b\u003e regions. The \u003cb\u003eRuchè\u003c\/b\u003e grapes used reach \u003cb\u003eripen\u003c\/b\u003e between the end of September and the beginning of October, and one hundred percent of these \u003cb\u003egrapes\u003c\/b\u003e are used for the Ruchè di Castagnole Laccento. The \u003cb\u003etraining\u003c\/b\u003e system is the \u003cb\u003elow\u003c\/b\u003e Guyot system, located on the sunniest \u003cb\u003ehill\u003c\/b\u003e with a southern exposure at an altitude of about 280 meters above sea level. The \u003cb\u003ealcoholic\u003c\/b\u003e fermentation is carried out with a portion of the \u003cb\u003egrapes\u003c\/b\u003e harvested when they are \u003cb\u003eover-ripe\u003c\/b\u003e and \u003cb\u003evinified\u003c\/b\u003e with \u003cb\u003ecold\u003c\/b\u003e maceration. This occurs in the first few days following processing. Subsequently, a \u003cb\u003ebrief post-maceration\u003c\/b\u003e is also carried out in a \u003cb\u003ehot\u003c\/b\u003e environment.
