Subsequently, both malolactic fermentation and maturation take place in \u003cstrong\u003emedium-toast French oak barrels\u003c\/strong\u003e, where the wine rests for between sixteen and eighteen months, keeping the two grape varieties separate. After blending, the wine remains for two months in stainless steel tanks and completes its ageing with a \u003cstrong\u003efifteen-month rest\u003c\/strong\u003e before being released to the market.
