The constant influence of sea breezes and marked summer temperature variations favour optimal ripening of the grapes. The vineyards grow on \u003cstrong\u003ealluvial soils\u003c\/strong\u003e, deep and porous, with a sandy-clay texture. Maturation continues for about twelve months in \u003cstrong\u003esecond and third passage barrels\u003c\/strong\u003e in contact with the fine lees, where the bâtonnage technique enriches its texture.
