The soils are characterised by a \u003cstrong\u003eclay and limestone matrix\u003c\/strong\u003e, well-drained and able to retain heat, giving the wine its distinctive savoury character. This historic area of South Tyrol fully enhances the varietal characteristics, allowing for a \u003cstrong\u003edefined structure\u003c\/strong\u003e and a clear freshness from the very first sip.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eProduction begins with a rigorous \u003cstrong\u003emanual harvest\u003c\/strong\u003e of the bunches, selected at perfect ripeness. In the winery, the whole grapes are pressed, followed by fermentation at a controlled temperature, which is essential to preserve the purity of the varietal aromas. Afterwards, the wine undergoes \u003cstrong\u003ematuration in steel\u003c\/strong\u003e for about three months in direct contact with the \u003cstrong\u003efine lees\u003c\/strong\u003e.
