The best grapes, at the moment of maximum ripeness, are selected and harvested by hand and subsequently destemmed and softly pressed. The must is then transferred to steel tanks where the alcoholic fermentation takes place, lasting between 8 and 10 days at a controlled temperature not exceeding 26°C. Subsequently, still in stainless steel, the \u003cstrong\u003emalolactic fermentation\u003c\/strong\u003e takes place and is completed before the onset of winter. \u003cstrong\u003eThe refinement\u003c\/strong\u003e takes place for \u003cstrong\u003e8 months in steel\u003c\/strong\u003e and then in the \u003cstrong\u003ebottle\u003c\/strong\u003e for another \u003cstrong\u003e4\u003c\/strong\u003e \u003cstrong\u003emonths\u003c\/strong\u003e.
