The area is characterised by \u003cstrong\u003esoils rich in clay and calcium\u003c\/strong\u003e, ideal for providing structure and promoting optimal ripening of the grapes. The management of the sixteen hectares of vineyards follows the principles of organic farming, a commitment to sustainability that has enabled the winery to obtain the \u003cstrong\u003eCasaClima Wine\u003c\/strong\u003e certification.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe \u003cstrong\u003emanual harvest\u003c\/strong\u003e takes place at the end of September, with a rigorous selection of the bunches and gentle pressing. Fermentation takes place in \u003cstrong\u003ecement vats\u003c\/strong\u003e at a controlled temperature for about twenty days. Subsequently, the wine undergoes malolactic fermentation and matures for twenty-four months in \u003cstrong\u003emedium-toast French oak barrels\u003c\/strong\u003e, partly new and partly second passage.
