The soil is of \u003cstrong\u003eHelvetian\u003c\/strong\u003e origin, composed of clay and limestone deposits. The natural \u003cstrong\u003erichness in iron\u003c\/strong\u003e of these soils imparts a pronounced mineral character and a clear flavour definition to the wine, enhancing its overall structure.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eIn the cellar, a \u003cstrong\u003etraditional long maceration method\u003c\/strong\u003e is followed. After harvesting in mid-October, spontaneous fermentation takes place in steel for about forty days, thanks to the exclusive action of \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e. Afterwards, the wine rests for six months in steel tanks before slowly maturing for thirty months in \u003cstrong\u003eSlavonian oak barrels\u003c\/strong\u003e.
