The result is a glass that precisely balances freshness and structure.\u003c\/p\u003e\u003ch3\u003eWhere does it come from\u003c\/h3\u003e\u003cp\u003eThe grapes grow in two distinct areas of Sicily, creating a unique expressive synergy. The Catarratto comes from \u003cstrong\u003eAlcamo\u003c\/strong\u003e, a historic and renowned area for the island’s finest white wines, while the Carricante and Grecanico Dorato are cultivated on the slopes of \u003cstrong\u003eEtna\u003c\/strong\u003e. This diverse origin enhances the Terre Siciliane designation, combining the character of the hills with the influence of the mountain. The \u003cstrong\u003eover thirty-year-old vines\u003c\/strong\u003e draw deep nourishment from the soil, producing balanced fruit rich in nuance.\u003c\/p\u003e\u003ch3\u003eHow is it produced\u003c\/h3\u003e\u003cp\u003eVinification begins with destemming and gentle pressing of the bunches. Fermentation is started with a pied-de-cuve using only \u003cstrong\u003eindigenous yeasts\u003c\/strong\u003e, with a brief skin maceration of about three hours to extract aromas and complexity. The wine then matures in \u003cstrong\u003efibreglass tanks\u003c\/strong\u003e for around ten months. No fining is carried out and only a gentle \u003cstrong\u003efiltration at bottling\u003c\/strong\u003e is performed, in order to preserve the wine’s expressive purity.\u003c\/p\u003e \u003cdiv\u003e\n\u003ch3\u003eHistory and Curiosities\u003c\/h3\u003e\n\u003cp\u003eIt all began in 2021 with the Patos® project for Sondre Lerche, thanks to our friend and Norwegian importer Jørgen Ljøstadt.
