After pressing, the must is immediately separated from the skins, followed by refrigeration and static decantation. Finally, fermentation takes place with selected yeasts, partly (70%) in stainless steel tanks at a controlled temperature (20°C), partly (the remaining 30%) in small 225-liter new Allier oak barrels. Aged for approximately 6 months, during which time malolactic fermentation is completed. The two blends are blended in the spring following the harvest and then bottled. Complex yet fresh aroma, fruity, intense, with pleasant vanilla notes.
