On the palate, it shows a full and enveloping structure, characterised by a \u003cstrong\u003ejuicy savouriness\u003c\/strong\u003e and pleasant fruity notes. The \u003cstrong\u003elong and persistent finish\u003c\/strong\u003e makes it ideal for pairing with fish dishes, asparagus or soft cheeses.\u003c\/p\u003e\u003ch3\u003eWhere it comes from\u003c\/h3\u003e\u003cp\u003eThe vineyards are located on the hills of Caldaro, in the heart of South Tyrol, an area where this variety has found ideal conditions since the nineteenth century. The vines, trained using the Guyot system, benefit from a south-east exposure at an altitude between 450 and 500 metres. The area enjoys a \u003cstrong\u003esignificant temperature range\u003c\/strong\u003e, with cool nights that help preserve the acidity and aromatic purity of the grapes. The roots sink into a \u003cstrong\u003ecalcareous and porphyritic soil\u003c\/strong\u003e of medium texture, rich in sandy marl, which gives the wine a refined \u003cstrong\u003emineral imprint\u003c\/strong\u003e.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe vinification of Stern begins with a \u003cstrong\u003ecold maceration\u003c\/strong\u003e of the destemmed grapes to extract their aromatic richness. After gentle pressing and settling, fermentation takes place slowly at a controlled temperature, divided between stainless steel tanks and \u003cstrong\u003elarge barrels\u003c\/strong\u003e. This approach allows the freshness of the grape variety to be balanced with greater complexity. This is followed by a period of \u003cstrong\u003eageing on fine lees\u003c\/strong\u003e lasting five months, an essential step to give body and roundness to the structure before bottling.\u003c\/p\u003e \u003cdiv\u003e\n\u003ch3\u003eHistory and Curiosities\u003c\/h3\u003e\n\u003cp\u003eIntroduced in South Tyrol at the end of the nineteenth century, \u003cstrong\u003eSauvignon Blanc\u003c\/strong\u003e has found its ideal habitat in Caldaro. The historic Kellerei Kaltern winery, founded in 1900, celebrates this perfect combination through the Stern label. Thanks to meticulous work among the vines to best manage the challenges of the \u003cstrong\u003e2024 vintage\u003c\/strong\u003e, oenologist Thomas Scarizuola has obtained grapes of exceptional quality, bottled in March.
