The vines, trained using the pergola system, are situated at altitudes between 50 and 150 metres and benefit from a favourable south and south-west exposure. The soil plays a crucial role: the alternation between volcanic basalt and marine limestone gives the wine its typical territorial identity. These conditions favour regular ripening of the bunches, preserving the elegant acidic backbone of the vines, which reach up to twenty-five years of age.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe process begins with a rigorous manual harvest, followed by destemming and crushing of the bunches. To extract the best aromatic components, the must undergoes a brief three-hour skin maceration before pressing. Afterwards, a twelve-hour cold settling naturally clarifies the liquid. Fermentation and final maturation in stainless steel preserve the varietal fragrance and ensure a clean aromatic profile.
