The Nebbiolo pomace is distilled in a state-of-the-art facility to preserve all the varietal aromas and fragrances intact. The still used is a discontinuous, steel still, and inside it, the pomace is passed through a jet of steam, carrying away the alcoholic vapors. These, then drawn into the distillation column, produce the distillate, which originally has an alcohol content of 70-75°C. The grappa is then aged in small barrels (225 liters) made of four different types of wood: acacia, juniper, oak, and birch. Aromas that evoke the typical scents of Piedmontese autumn: mushrooms, hazelnuts, hay, grapes, raisins, and blackberries, with hints of camphor and dark chocolate. A golden grappa.
