The grapes are rigorously hand-picked with the utmost care in small perforated baskets. After a gentle pressing, the grapes undergo a long maceration. Alcoholic fermentation occurs spontaneously with indigenous yeasts without the use of sulfites, with careful control of maceration times and temperature. Aged in small oak barrels for a minimum of 18 months in contact with its indigenous yeasts. A swirl of sweet spice aromas and fruity notes; hints of cherry, mint, and licorice emerge. Ruby red, almost garnet, in color.
