On the palate, it reveals a \u003cstrong\u003epronounced minerality\u003c\/strong\u003e balanced by a pleasant freshness, with \u003cstrong\u003enotes of gooseberry and peach\u003c\/strong\u003e accompanying the sip towards a clean and smooth finish, following fermentation in steel and maturation in large wooden barrels.\u003c\/p\u003e\u003ch3\u003eWhere it comes from\u003c\/h3\u003e\u003cp\u003eThe grapes come from the vineyards of Novacella, located above Bressanone, where the \u003cstrong\u003ePacher Hof\u003c\/strong\u003e estate cultivates vines between 620 and 900 metres above sea level. The \u003cstrong\u003emoraine soils\u003c\/strong\u003e, composed of sandy-silty gravel, give the wine a distinctive mineral imprint. The area's \u003cstrong\u003ewarm microclimate\u003c\/strong\u003e, tempered by a \u003cstrong\u003emarked temperature range\u003c\/strong\u003e between day and night, allows for ideal aromatic ripening, ensuring balance and definition in every sip.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe vinification process begins at the end of September with the harvest of Guyot-trained bunches, with low yields to preserve quality. Maturation continues for about six months on the \u003cstrong\u003efine lees\u003c\/strong\u003e, divided between steel containers and \u003cstrong\u003elarge wooden barrels\u003c\/strong\u003e.
