Sweet white wine \u003cb\u003eDOCG\u003c\/b\u003e is produced by the G. D. Vajira winery which, for this Moscato d'Asti as well, follows sustainable and low environmental impact cultivation methods, forgoes irrigation, encourages spontaneous grassing and varies thinning depending on the specific \u003cb\u003evintage\u003c\/b\u003e. A young white wine that is drunk after a not excessively long preparation, it is harvested in September and served, fresh and light, on the tables set during the Christmas season. To produce Moscato d'Asti G.D. Vajra wine, the first step is a careful but not excessively forceful pressing. Immediately after, a short \u003cb\u003ecold decantation\u003c\/b\u003e is carried out and the subsequent \u003cb\u003efermentation\u003c\/b\u003e phase is carried out.
