After him, in 1958, Don Fiorino Marengo founded the \u003cb\u003eProduttori del Barbaresco.\u003c\/b\u003e Today, \u003cb\u003eBarbaresco\u003c\/b\u003e cultivation is concentrated \u003cb\u003ein a few municipalities in the province of Cuneo, Piedmont, and in the famous Langhe area, which is very rainy and foggy but precisely for this reason ideal for \u003cb\u003egrowing Nebbiolo\u003c\/b\u003e, a delicate grape that requires slow ripening, so much so that in some years it can last until late November. The clayey or calcareous-clayey soils, along with the altitude of the area, are key elements in its cultivation, greatly enhancing the quality of Barbaresco, a wine made from 100% Nebbiolo. But how is Barbaresco made? When the Nebbiolo grapes are harvested, they are pressed to obtain the must, which is left to ferment in enormous vats or steel tanks. The skins are then separated from the wine, which is then extracted from the barrels. These, as long as they are strictly oak or chestnut, are used to house the Barbaresco for the entire first year, after which the wine is further aged for 14 months.
