La Valentina’s vineyards are situated at an altitude between one hundred and fifty and four hundred metres above sea level. The optimal south and south-west exposure ensures excellent sunlight, promoting a slow and regular ripening of the grapes. The vines grow on \u003cstrong\u003emedium-textured soils\u003c\/strong\u003e, characterised by a strong clay-limestone component. These pedoclimatic conditions give the wine remarkable structure, deep colour intensity and that distinctive \u003cstrong\u003esavoury drive\u003c\/strong\u003e that balances the sip, offering a faithful expression of the \u003cstrong\u003ehilly terroir\u003c\/strong\u003e.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe processing of the grapes begins with a rigorous manual selection, followed by destemming and crushing. Alcoholic fermentation takes place in steel vats at a controlled temperature, with a \u003cstrong\u003emaceration on the skins\u003c\/strong\u003e of about ten days to extract colour and aromas. After malolactic fermentation, the maturation phase begins. The \u003cstrong\u003eeighteen-month ageing\u003c\/strong\u003e takes place mainly in steel, with the use of concrete tanks and a measured passage in \u003cstrong\u003eoak barrels\u003c\/strong\u003e and second and third passage barriques.
