On the palate it is enveloping, with \u003cstrong\u003eintense yet rounded tannins\u003c\/strong\u003e and excellent acidity, leading to a dry finish that is ideal for enhancing slow-cooked meats and \u003cstrong\u003emature Italian cheeses\u003c\/strong\u003e.\u003c\/p\u003e\u003ch3\u003eWhere it comes from\u003c\/h3\u003e\u003cp\u003eThe grapes come from the hills of Manzano, Buttrio and Cividale, in the Venezia Giulia area. The vineyards are located at around two hundred metres above sea level, with a sunny and ideal exposure. The soil is characterised by \u003cstrong\u003ecalcareous Eocene marl\u003c\/strong\u003e, a key geological element that gives the wine its acidic backbone and a pronounced tannic structure. These pedoclimatic conditions of \u003cstrong\u003eFriuli Venezia Giulia\u003c\/strong\u003e favour the optimal \u003cstrong\u003eripening of the grapes\u003c\/strong\u003e, preserving the integrity and clarity of the aromatic bouquet.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe grapes are hand-harvested in October; part of the Refosco dal Peduncolo Rosso and Schioppettino undergo natural drying. The fresh grapes ferment in stainless steel at a controlled temperature, while the dried bunches macerate in open vats with \u003cstrong\u003emanual punching down\u003c\/strong\u003e and vertical wooden pressing. The blend undergoes malolactic fermentation and matures for twenty-four months in \u003cstrong\u003enew French oak barrels\u003c\/strong\u003e.
