High latitudes are the best habitat for this grape variety, which prefers soil with a good concentration of clay and limestone and a fairly cool climate. The Pinot Noir is lovingly cared for until ripe, and then harvested by hand in mid-September. The must undergoes a \u003cb\u003esoft pressing\u003c\/b\u003e and then moves into stainless steel tanks. Rosé Champagne is made according to the classic brut method, which involves refermentation of the wine in the bottle through the \u003cb\u003eaddition of selected, strictly indigenous yeasts\u003c\/b\u003e that activate the fermentation process.
