||Manual harvesting in crates at the end of October, destemming and crushing of the grapes.
||Fermentation and maceration for 2 weeks. The extraction of the primary aromas and the phenolic component is guaranteed by various re-assembly cycles followed by a post-fermentation maceration phase. After drawing off, the soft pressing of the marc follows and the immediate transfer of the wine to the tank to carry out the malolactic fermentation.
||The wine enriched with its extractive component is thus ready for the subsequent evolution in wood (French wood barrels for 9 months) and steel tank where it stops for bottling and long refinement in stacks.
