||The hand-harvested grapes are delivered by the members of the cooperative just a few hours after the grape harvest.
||The grapes are soft pressed with extreme delicacy to avoid damaging the skins. Before the classic white winemaking process begins, some of the grapes are macerated with CO2 snow for a few hours to accentuate the typical character and style of the wine. Fermentation takes place at a controlled temperature (16-18°C) in stainless steel vats using selected yeasts. Malolactic fermentation is prevented to preserve the freshness of the wine.
||After a brief period of ageing in steel vats, the wine is bottled in the spring following the vintage.
||It matches very well with fish dishes which exalt the freshness and the quality of the ingredients.
