||Hand-harvested in small crates, generally during the last week of September, choosing only the healthiest and most ripe clusters. This wine is produced only in the most optimal vintages.
||Soft press and destemming. Fermented in stainless steel tanks at a max. temperature of 30 °C.
||Then transferred into French barriques of new cooperage, where it matures for 15 months. Following a very light filtration the wine rests in the bottle for over 3 years before release.
