||50% Corvina, 10% Rondinella, 30% Corvinone
||Harvested by hand around the beginning of October, they are immediately taken to the cellar for vinification.
||Grapes are destemmed and softly crushed before fermentation in stainless steel tanks at a controlled temperature between 25 °C and 28 °C. Here they stay for 10 days with daily pumping over and delestage, in order to improve the extraction of tannins and polyphenols present in the grape skin.
||After racking the wine is placed in second passage oak barrels where it matures for 3 months before bottling.
||The combination with tasty first courses, white meat main courses, mixed grills and medium mature cheeses is excellent.
