||Harvest: 75% hand-picking - 25% mechanical. From the 14th to the 30th of September. Merlot : September 14th – 26th. Cabernet Sauvignon : September 21st – 30th. Cabernet Franc : September 29th.
||Plots are vinified independently in 41 tanks (concrete and wooden) 25, 50, 80, 95, and 100 hl. Fermentation between 21 and 28 days according to the quality of the crop within the tank. Alcoholic fermentation between 27°C and 29°C. Vertical and horizontal press.
||12 months in French oak barrels (35% new barrels, 35% barrels used for one previous vintage, 20% barrels used for two previous vintages, 10% in vat). Fined with egg white after the final blending.
