||Grapes are picked late October and then placed on mats to dry until January.
||Soft pressure is applied to the dry grapes to obtain the must then decanted.
||Aged for at least 5 years in oak and chestnut casks of 100 l capacity; then follows a fining process in bottle for 12 to 14 months.
